Chicken Avocado Burritos

HAPPY ANNIVERSARY, POORGIRLSCANCOOKTOO! We have officially been live for one year, and I am so excited :) Thank you everyone for following this journey of cheaper (and sometimes healthier) eating!
This recipe from Pinterest was such a good starting point for the dinner I made. It looked so easy and simple! When I started cooking, though, I realized I had more ingredients in the pantry that I hadn't used for other recipes I had planned on, and I thought they would be good additions to this meal. I actually didn't follow this recipe almost at all, so I will share that recipe from GimmeDelicious.com and the recipe I turned it in to. I fed 2 hungry soldiers and they LOVED them, which was awesome.
Quick and Easy Chicken Burritos
Ingredients:
~2 c cooked shredded chicken
~1/2 c Mexican cheese blend ( or mozzarella)
~1 avocado diced
~2 tbsp cilantro chopped
~4 large tortillas
~1 tbsp oil
Directions:
1. Mix the shredded chicken, cheese, cilantro, and the diced avocados.
2. Lay a tortilla flat on a plate and add ¼ of the mixture, form a roll. repeat the process for all four tortillas.
3. Pour 1 tablespoon oil into a heated pan or griddle. Place all four tortillas on the pan and cook for 2 minutes on medium- high heat. Flip on the other side and cook for another minutes or until the the burritos are golden in color. Serve warm.
4. Burritos can be frozen cooked or uncooked for up to 3 months.
So, I did this totally different...but they had a lot of flavor, and they tasted really fresh, which is always a nice touch!

Sarah's Chicken Avocado Burritos
Ingredients:
~3 chicken breasts, sliced
~1 lime
~3 avocados, sliced
~1/4 c cilantro, chopped
~1/2 c mexican cheese blend
~1/2 c mozzarella cheese
~1/2 black beans
~1/2 c Rotel diced tomatoes w/ green chilies
~6 large tortillas
~EVOO or Italian dressing
~2 tbsp butter
Directions:
1. Slice the chicken breast, and cook in EVOO or Italian dressing until cooked through.
2. When your chicken is cooked thoroughly, squeeze juice from half a lime over the chicken.
3. Layer the burritos with both cheeses, beans, chicken, tomatoes, cilantro, and avocados. Roll your burritos and set aside.
4. Melt a tbsp of butter in the same pan you cooked your chicken in. Place the burritos one by one (I fit three in a pan at once) in the pan and fry until the cheese is melted and the tortillas are browned on the bottom. Flip and brown the opposite side.
These were just so good and filling! I hope you guys enjoy :)
