Ground Turkey Sweet Potato Skillet

Ya'll. This dish was amazing. Sounds pretty gross, at a first glance, and I had to make a deal with Cory that as long as he took a "no thank you" bite and he didn't like it, he could eat whatever he wanted (which 9 times out of 10 would have been cereal...) but he said it wasn't bad! It was definitely something different than what I have made before, but it was really filling and I didn't feel guilty while eating it! I found it on Pinterest, of course! I recently found a new site, Primavera Kitchen, and I think it will help me ease into a healthier diet, which is much needed if we're being honest, and I am excited to start learning new recipes!

Ground Turkey Sweet Potato Skillet

Ingredients:

~2 tbsp EVOO

~1 lbs extra-lean ground turkey

~1 tsp garlic clove, minced

~1/2 c onions, diced

~1/2 c yellow pepper, diced

~1 1/2 c sweet potato, diced

~s & p to taste

~A pinch of red chili flakes

~1/2 c shredded mozzarella cheese

~Fresh parsley for garnishing

Directions:

1. In an iron cast skillet (I used a regular deep pan, my cast iron is rusted :(), heat olive oil over medium high heat.

2. Add ground turkey and garlic. Stir occasionally and cook for about 10 minutes.

3. Add onions and yellow peppers and cook until onions are gold brown.

4. Add the sweet potato, chili pepper, salt and pepper.

5. Cover the skillet and cook until they are tender. Don’t forget to stir occasionally. If necessary, add more olive oil or a little bit of water to cook the sweet potato.

6. While the sweet potato is cooking pre-heat the oven to 400 degrees.

7. When the sweet potato is tender, add shredded mozzarella cheese and bring the skillet to the oven to melt the cheese.

8. When the cheese melts, remove from the oven and garnish with parsley.

So, I had to skip steps 6-8 because of the lack of cast iron skillet. I used a stainless steal pan, and therefore could not put it in the over (at least to my knowledge anyway..). However, I just melted the cheese and added loads of fresh parsley and just covered the pan and let the cheese melt! I served it over white rice, and I just felt so good eating it. Hope you guys try and enjoy!

Also, so sorry I haven't been posting in a while.......againnnn. Life is hard, okay, just keep your faith in me and I'll get these recipes uploaded when I can :)

OH! And Cory and I went to the Cider Mill today, and I got some fresh apple butter, some apple cider doughnuts, and a cider slushie, and today was awesome! So here is a picture of me and my handsome husband!
