I am finally getting with the times and using Pinterest to find recipes! For the longest time, as you alllllll know, I got my recipes from ones I made up or on Facebook, but I finally figured out how to use Pinterest, and there are SO MANY RECIPES. Like hello, why didn't I do this before?!? The recipes you can find on Pinterest are for anyone! Easy, complicated, healthy, special treats, literally anything! So, the next few recipes I will be posting will be from Pinterest (I actually have a PGCCT board on my personal Pinterest if you want to follow along there as well!) and they are so different than what I have tried in the past, and I'm already loving them.
This specific recipe interested me because hello, HAWAII! I actually miss it, just a little bit, even though I'm finally getting to experience fall for the first time! But anyways, the whole pineapple, cilantro, red onion combo totally interested me so obviously I had to try this dish!
(Click on the link below to be taken to the original recipe)
Ingredients:
~1 Tbsp olive oil
~2 boneless, skinless chicken breasts, cut into bite-size pieces
~salt and pepper
~1/2 c barbecue sauce
~1/2 c shredded mozzarella cheese
~2/3 c chopped pineapple, fresh or canned
~1/4 of a red onion, chopped
~1 romaine heart, chopped
~1/4 c fresh chopped cilantro
~4-5 large wheat or white tortilla
Directions:
1. Heat oil in a large skillet over medium high heat. Add chicken pieces to the pan and season with salt and pepper. Cook, flipping once until chicken is cooked through and golden brown. Remove pan from heat. Add barbecue sauce to the pan and toss chicken to coat.
2. Place tortilla on a plate. Layer with a spoonful of barbecue chicken, cheese, pineapple, onion, chopped romaine and cilantro. Roll, burrito style and secure with a toothpick. Serve immediately.
This was absolutely delicious, and I loved this dish so much. It was surprisingly easy to make, so I think it will become a regular meal! I used smaller, whole wheat wraps, so I'm pretty happy with how healthy this meal actually was! Overall, this was super great, healthy, and filling! Enjoy!
