Grilled Salmon Burgers

Its that time again. That time towards the end of the pay period where groceries are almost gone, and its still a few days away before you can go grocery shopping again. We still have a few groceries in the fridge, but what kind of combination can we come up with to actually make a decent dinner..? We always buy salmon every time we go to the store, because its actually decently priced at Aldi, so I knew it was still in the freezer! I decided to grill it up and throw it on some buns with spicy mayo, and it actually turned out to be a decent dinner! Grill Master Cory kept an eye on the salmon on the grill while I made some roasted potatoes and asparagus inside, and we made a well balanced meal! Horray! Recipe below :)
Grilled Salmon Burgers
Ingredients:
~salmon fillets, thawed (enough for 1 per person)
~salt, to taste
~pepper, to taste
~pepper jack cheese, 1 per sandwich
~fresh spinach
~sauteed onions
~spicy mayonnaise
~potato buns, toasted
Directions:
1. Lay salmon fillets in a foil "bowl", and add salt and pepper, and put on the grill on low-medium heat.
2. Grill until internal temperature of salmon is 145F, then remove from heat.
3. Top toasted buns with spicy mayo (mayo and crushed red pepper mixed together), sauteed onions, spinach, and cheese. Enjoy!
Quick Roasted Potatoes
Ingredients:
~4 small red potatoes, cubed
~EVOO
~salt, to taste
~pepper, to taste
~oregano, to taste
~paprika, to taste
~red pepper flakes, to taste
Directions:
1. Preheat oven to 400F. On a baking sheet, combine all ingredients, and make sure potatoes are coated evenly (with seasonings and EVOO).
2. Arrange potatoes in a single layer on the baking sheet, then bake for 20-25 minutes, or until potatoes are cooked thoroughly, but not overly mushy.
Balsamic Asparagus
Ingredients:
~asparagus, enough to feed whomever you are cooking for
~balsamic vinegar, to taste
~EVOO
~salt, to taste
~pepper, to taste
Directions:
1. Arrange asparagus in a single layer on a baking sheet.
2. Top with balsamic vinegar, EVOO, salt, and pepper, and place in oven with potatoes (or in a 350F oven for a longer time) for 10-15 minutes.
This whole dinner was so good and well balanced, like an actual adult made it ;). It was a tad bit spicy, though, because I was overly generous with pepper and red pepper flakes, so I'm surprised Cory could even finish it! But I loved it, and I will definitely be making it again!
