Two Different Shrimp Recipes

I have definitely been on a shrimp kick lately. While I'm not exactly sure of the health benefits/effects of shrimp, I do know that the last couple recipes I have tried have definitely been amazing. I found one recipe from Tasty, and the other one I made up as I went along. It was one of those "end of the pay period, nothing in the fridge" type recipes, but honestly it was so good!
Tasty's Shrimp and Asparagus Stir Fry

Ingredients:
~4 tbsp olive oil ~1 lb raw shrimp, peeled and de-veined ~1 lb asparagus, ends trimmed, cut into smaller pieces ~1 tsp salt ~½ tsp crushed red pepper ~1 tsp garlic, minced ~1 tsp ginger, minced ~1 tsp low sodium soy sauce ~2 tsp lemon juice
Directions:
1. In a large frying pan, heat 2 tbsp olive oil over medium-high heat. Add shrimp to the pan, then season with ½ tsp of salt and ½ tsp crushed red pepper. Cook until the shrimp is pink. Remove the shrimp from the pan and set aside.
2. In the same pan, heat 2 tbsp olive oil and add asparagus. Add ginger and garlic, then season with ½ tsp of salt. Stir frequently and cook until the asparagus is tender-crisp.
3. Return the shrimp to the pan, then add soy sauce. Stir until the ingredients are well combined. Just before the dish is ready, add lemon juice, stir once more, then serve while hot.
I also added 1 sliced red pepper, and served the dish with a side of brown rice, and it was delicious! Not gonna lie, I felt so healthy while eating it ;)

Shrimp Fried Rice
Ingredients:
~1 lb raw shrimp, peeled and de-veined
~2 whole carrots, sliced
~1/2 lb asparagus, cut into smaller pieces
~rice, cooked according to package
~1/4 c sweet chili sauce
~1 tbsp soy sauce
~1 tsp butter
~1 egg
~salt and pepper to taste
Directions:
1. Melt the butter in a pan, then add the shrimp to the pan and cook until pink. Season with salt and pepper to taste.
2. Add asparagus and carrots to pan, and cook until tender. Then, add soy sauce, sweet chili sauce, and cooked rice to pan and stir to combine all ingredients.
3. Crack the egg in the pan (like they do at the cool hibachi restaurants) and after the egg has been cooked all the way through, stir one last time and serve!
I honestly really liked this dish, and its definitely great for that end-of-the-pay-period struggle when you can't buy any more groceries...Also, Aldi sells 1 lb bags of frozen, raw, de-veined shrimp for very cheap, all you have to do is thaw and peel the shrimp! So easy! I hope you guys try these recipes and enjoy!
