Bacon Wrapped Guacamole Stuffed Chicken

Has it really been almost a month since I've made a new blog post? I have been so busy with school and work these past 5 weeks, and I'm usually up studying every night instead of finding new recipes to make....Thankfully my final is tomorrow, and then I will have almost a month off before fall semester starts! In the mean time, I will be trying to cook and upload the recipes as often as I can! It has been so eventful these past few weeks, our roommate from Hawaii came to visit us here in New York, Cory and I went to Niagara Falls, the list goes on and on! I love the life we have here!
Okay, now on to the recipe! I will be doing something in this blog post that I have never done before: disliking a recipe from Tasty....In theory, this recipe sounded amazing! Chicken, guacamole, and bacon, what could be bad?!? Making the dish was easy enough (except for the fact my avocados were still a little unripe, so they were hard to make guac with), it just didn't turn out how I expected. I'm not trying to turn you guys away from a recipe before you even try it, it may be one that you love! I will be adding some different alternatives that might help improve the recipe (in my opinion) at the end.

Bacon Wrapped Guacamole Stuffed Chicken
Ingredients:

For the guacamole: ~3 avocados ~1 red onion, diced ~Handful of fresh coriander, roughly chopped Ototally didn't know this is the same as cilantro, but the more the better!!!) ~1 tomato, diced ~Juice of 1 lime ~1 green or red chilli, chopped and deseeded (I left this out, Cory hates spicy foods) ~Salt and pepper to taste For the chicken: ~2 chicken breasts ~4 bacon rashers (remember this is from Proper Tasty, the British version of Tasty ;)
Directions:
1.Preheat oven to 400°F. 2.In a big bowl, combine all of the guacamole ingredients and stir together with a fork or whisk. (I ended up throwing the whole thing in my blender and roughly blending it to where it was still chunky, but more combined) 3. Butterfly chicken breast by cutting it in half lengthways, about 90% across, and folding it open. 4. Flatten chicken with a rolling pin. Spoon 1 tablespoon of guacamole onto one side of the chicken and fold it over.
5. Wrap the chicken in 2 slices of bacon, then bake for 15-20 minutes, or until chicken is cooked through.
I ended up cooking the chicken breasts a little longer than the directions said to, and it still wasn't as cooked as I would have liked. Next time, I think I would stuff the chicken with cheese instead of guacamole, and serve the guacamole on the side. I am not a fan of warm avocado.... Even though this dish didn't turn out the way I was expecting, it was still extremely easy and gives you ideas for different recipes. Enjoy!
