Buffalo Chicken Dip

So everyone knows that 4th of July is in a few days, and that means tons of BBQs and friend time! You definitely can NOT show up to a get together empty handed, and this chicken dip is seriously a winner! My mom first got the recipe from a friend when I was in like 5th grade, and it is always around at family parties or holiday get functions! I actually brought it to a New Year's Eve party and it was literally gone within 10 minutes. As you can probably tell, the dip was gone within minutes! Our friend (the one in the green) loved it so much, he found my mom on Facebook and sent her a message thanking her for giving me a recipe!!! My mom included this recipe in the cookbook she made me for Christmas, and I can't wait to make it again tomorrow for a cookout with new friends! The recipe is below!

Buffalo Chicken Dip

Ingredients:

~4 boneless, skinless chicken breasts

~1 c Texas Pete buffalo sauce (because it is definitely the best)

~2 c shredded cheddar cheese

~1 c ranch dressing

~16 oz cream cheese, softened

~EVOO

~S&P to taste

Directions:

1. Preheat your oven to 350 F. Place your chicken breasts in a 9x12 glass baking dish, seasoned with EVOO and s&p. Bake for 40 minutes, or until chicken is completely cooked. Remove and let cool.

2. In a large bowl, combine cream cheese, 1 cup of the cheddar cheese, ranch, and wing sauce until completely combined.

3. Using two forks, shred your chicken into small bite sized pieces, then layer the chicken in the bottom of the pan.

4. Spread the sauce mixture on top of the chicken, then top with remaining shredded cheese and bake for 20 minutes or until cheese is bubbly. Serve with tortilla chips or veggies and enjoy!

Okay so I make this a little differently than my mom does. Instead of baking the chicken in the oven, I place all the chicken breasts in the crock pot topped with s&p, chicken broth and any other spices I can think of. I cook them on high for 3-4 hours, and by the time they are finished, they shred SO EASILY! It also makes cleaning up a lot easier! I hope you guys try out this recipe, because I know that it will be a huge hit at any social gathering you attend this summer!
