Chicken Sandwich

I miss Chick Fil A SO MUCH. I've heard rumors that they will be building one in Syracuse, so you can bet that I will be driving the 2 hour round trip very frequently! Anyways, one of the meals I planned to cook was breaded chicken sandwiches, it just sounded so good right? Its as close to CFA that I can get, so I was gonna go all out! Side note: I have never used Panko bread crumbs before and it actually wasn't bad for my first try!

Chicken Sandwich
Ingredients:
~2 chicken breasts, completely thawed and sliced in half
~3 eggs
~1/4 c milk
~2 cups Panko
~S&P to taste
~vegetable oil
~brioche buns (1 per sandwich)
~any desired sandwich toppings
Directions:
1. Heat enough oil in a pan that will cover half a chicken breast.
1. Combine eggs and milk in one dish to create an egg wash, and combine Panko, salt, and pepper in another dish.
2. Coat each chicken breast in the egg mixture then in the Panko mixture, then transfer to the heated oil.
3. Cook each chicken breast until the outside is golden brown, and place on paper towel lined plate to dry off the oil. To ensure that they are fully cooked, take two forks and separate the middle of the chicken breast (make sure you don't actually slice or cut it, just make a little hole).
4. Build your sandwich and enjoy!
For my sandwich, I toasted my bun, then topped with ranch, spinach, sliced tomatoes, red onions, and colby jack cheese. It was so good! Cory wanted BBQ ranch, spinach, and colby jack cheese on his, and he really loved his too. It honestly wasn't that hard to make and it made me miss Chick Fil A a little less.
