One Pot Poached Shrimp and Orzo

Holy moly. Tasty just gets it. They always share the best recipes and they are so easy! I found this particular recipe while scrolling through Facebook during my meal plan day. I have never made orzo like this before but after watching the video, I figured I could do it, because it looked easy enough! I found all the ingredients fairly cheaply between Aldi and Walmart so I was good to go. (Seriously if you haven't been to Aldi yet, you HAVE TO GO! They have a ton of organic, GF, and vegan food there that is so cheap. I found Mac n Cheese for $.33 so yeah, they're legit.) They original recipe is here, and listed below!

One Pot Poached Shrimp and Orzo

Ingredients:

~2 Tbsp. of water ~8 Tbsp. of butter ~2 tsp of lemon zest (I used lemon juice, I didn't have a grater up until yesterday...) ~1 sprig of thyme (how much thyme is too much thyme?) ~1/2 lb of shrimp (I used the bag of frozen cooked, deveined , tail on shrimp) ~2 cloves of garlic ~1 shallot** ~1 cup of orzo ~2 cups of chicken stock ~S&P to taste ~4 cups of spinach ~Parsley for garnish

Directions:

1. Over low heat, add water to your saucepan and slowly incorporate the butter, a few tablespoons at a time. Whisk together to make sure the water and butter combine and doesn’t separate.

2. Add the lemon zest and sprig of thyme and give it a stir.

3. Add the shrimp and poach for eight to 10 minutes. Remove shrimp and set aside. Discard the sprig of thyme.

4. In the same saucepan and over low heat, add garlic, shallots and the orzo. Salt and pepper to taste. Stir until all the liquid has been absorbed.

5. Pour in the chicken stock and cook until the orzo is al dente. Stir occasionally to make sure nothing is sticking to the bottom of the saucepan.

6. Once the orzo is al dente, add the spinach. Stir in until just wilted. Remove from heat.

7. Serve the spinach and orzo, place a few shrimps on top and garnish with chopped parsley.

**Okay so I have absolutely no clue what a shallot is, so I just guessed and bought a red onion and diced it up really small and used that instead. Still tasted bomb.

If you really want to impress someone with an easy but delicious meal, this is definitely one of them! I was pleasantly surprised that Cory really liked this and guess what?!! There were NO leftovers! I hope you like this recipe and share with your friends and family!
