Leftovers are the best! (sometimes...)

I am NOT a leftover person at all. I think eating leftover food is never as good as eating it fresh. However, I have not yet mastered cooking for two so we are almost always stuck with leftovers....I will essentially be sharing two separate meals on this post; the original dinner I made and the leftover meal I turned it into. Both meals were pretty good actually and they were fairly cheap and extremely easy!

Shredded BBQ Chicken

Ingredients:

~2 boneless skinless chicken breasts (they do NOT have to be thawed)

~1/2 c chicken stock

~1 cup water

~pepper to taste

~oregano to taste

Directions:

1. Put all ingredients in crock pot and cook on high for 3-4 hours.

2. When the time is up and chicken is cooked all the way through, take the chicken out and shred. Set aside.

BBQ Sauce

Ingredients:

~2 cups Sweet Baby Rays Honey BBQ Sauce

~1/4 c honey

~salt to taste

Directions:

1. Combine all ingredients over medium heat.

2. Pour sauce over shredded chicken then mix until chicken is coated evenly.

See how easy it is? I made a main dish with very little effort and it was so cost effective. I made mac n cheese alongside it (.33 c at Aldi, how could I NOT buy a couple boxes?) as well as broccoli. However, the broccoli I used was from a bag of broccoli "bits and pieces" not florets ): So I improvised and combined the mac n cheese and broccoli and it wasn't that bad!

Leftover Shredded BBQ Chicken Quesadillas

Ingredients:

~2 tortillas per quesadilla

~leftover shredded BBQ chicken

~mozzarella cheese

~mexican blend cheese

~cheddar cheese

~butter

Directions:

1. Melt butter in a pan over medium heat and place one tortilla in the pan.

2. Layer the chicken and all cheeses on tortilla then top with 2nd tortilla.

3. Flip quesadilla when bottom tortilla is crispy and golden, but not burnt. (You'll have to check with a spatula to keep track)

See how easy it is to get two different meals out of 2 chicken breasts? I am not the biggest fan of BBQ sauce (or leftovers) but both meals were great. I actually liked the quesadillas better than the shredded chicken the night before (dipped in ranch of course)! I hope you guys enjoy both meals and try to turn your leftovers in to a whole new meal!
