Last Minute Salmon Recipe

I just got back to New York on Monday, and of course we have no groceries except for what was already in the fridge/freezer/pantry before I left, and coincidentally we are in the middle of the pay period which means no money... I took this as a challenge to use up the remainder of our groceries to hold us over until payday and still make delicious meals. I found some salmon in the freezer, rice in the pantry, and baby carrots in the fridge...CHALLENGE ACCEPTED.
Last Minute Salmon Recipe
Ingredients:
~2 salmon fillets
~1 lime, sliced
~1/2 white onion sliced
~salmon rub
~paprika
~pepper
~salt
~garlic powder
~coconut oil
~goat cheese
Directions:
1. Prepare the salmon with the rub on each side.
2. Heat the pan with coconut oil, and lay half the sliced limes and onions in the pan, then place the fillets on top of the limes and onions, then top the fillets with the remaining limes and onions.
3. Cover the pan and let the fillets simmer until they are almost fully cooked, while the oven is heating up.
4. Transfer the fillets, limes, and onions to a baking sheet, and top the fillets with goat cheese then let broil for 5-ish minutes, allowing the cheese to melt and the fillets to finish cooking.
5. When the salmon fillets look flaky, they are completely cooked and ready to serve!

Garlic and Lime Rice
Ingredients:
~rice, enough for who you are cooking for
~juice from one lime
~minced garlic
~pepper to taste
Directions:
1. Cook rice according to package.
2. When rice is almost finished cooking, add in lime juice, garlic, and pepper, and store to combine. Serve and enjoy!
Steamed Carrots
Ingredients:
~carrots
~honey
~salt
Directions:
1. Fill your steamer (or rice cooker) with water and place carrots in the top holding section and allow your carrots to steam for at least twenty minutes, or until the carrots are soft but not mushy.
2. When the carrots are steamed, toss them in honey and a dash of salt, and they are ready to serve! Enjoy!
I hope you guys enjoy this healthy meal, and notice how easy it was to make!!! So easy, so delicious, so healthy! I was hesitant about the whole meal in general, because I wasn't sure if each portion of the meal complemented each other, but it turned out so good, and Cory loved it too.
