A little about my trip home so far... (Easy Fritata Recipe)

Amy's Chicken Enchiladas

So I have been home for about 2 weeks now and it has been so relaxing! I have been running almost every day (I know right!!) and just hanging out with some of my best friends. One of my friends, Amy, used my recipe and made Chicken Enchiladas (I haven't posted the recipe for it yet, oops) and she said it turned out so good! Ahh I am so proud of her, and I am so thankful that my friends are coming to me for food advice!

This past Friday was my mom's birthday, and of course we celebrated all weekend, because that's just how Lunsford's do it! This morning, my sisters, their significant others, my mom's bf's daughter and her son, and one of my best friends came to breakfast for a grand total of eight people! And I was enlisted to cook a big birthday breakfast for everyone!! It was INSANE! My mom requested that I make a fritata (for my sister and her gf who have special dietary restrictions), and also my "famous empanadas"! I also made bacon and sausage that made for a delicious breakfast spread. I will be uploading the recipe for the fritata on this post, and then the recipes for the empanadas on a separate post! I hope you guys enjoy, and had a relaxing weekend!

Easy Fritata

Ingredients:

~12 eggs

~1/2 c milk

~1 green bell pepper, chopped

~1 red bell pepper, chopped

~1 white onion, chopped

~1/2 c spinach

~1 cup small cherry tomatos, sliced in half

~1 (small) bag cheddar cheese

~1/2 bag onion tater tots (optional), cooked half way through

~S&P to taste

Directions:

1. Bake your tater tots according to the package, cutting the cooking time in half. They will finish cooking when they are in the oven with the rest of the egg mixture.

2. While your tots are baking, dice up your peppers and onions. Set aside.

3. Whisk together your eggs and milk, then add your S&P. After your egg is mixed together, add in your veggies (spinach can be added raw).

4. Spray your glass baking dish with non stick spray, then layer the partially cooked tots on the bottom. Change the temperature of your oven from 450F (from the tots) to 350F for the fritata.

5. Pour your egg mixture on top of the tots, making sure its layered evenly, and the veggies are dispersed throughout the dish. Sprinkle your cheese on top of the egg mixture, and bake for 45 minutes to an hour.

When it comes out of the oven, the cheese should be nice and melted and gooey and delicious. This would be the perfect meal for a Mother's Day brunch next week ;)! It was so good and fit well with everyone's specific diets! You can also add whatever veggies or meats you desire, whatever you like in your scrambled eggs! I was receiving complements on the breakfast I had made all day! I think my family was impressed because I had never really cooked for them all before, so this was kind of a big deal!! I hope you all enjoy this as much as my family did!
