The past few days here in New York have been rainy and snowy and just plain nasty out! I decided to take a break from my attempt at healthy meals and make something savory and delicious to make for a cozy night in. I went searching for this recipe online because we were craving chicken and dumplings, and when I saw one that I could make in my crock pot, OF COURSE I had to choose that one, right?! I started it around 1 and it was done by 7 and oh my gosh it was so good! Cory was so excited because its something his mom used to make for him, and he loved it! I paired last night's dinner with steamed green beans and called it a day! Original recipe is here and listed below, enjoy :)
Crock Pot Chicken and Dumplings
Ingredients:
~4 boneless, skinless chicken breast halves
~2 tbsp butter
~2 10 oz cans condensed cream of chicken soup
~1 onion, diced
~2 10 oz packages biscuit dough, torn into pieces

Directions:
1. Place chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover (I used 2 cups).
2. Cover, and cook for 5 to 6 hours on high. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center (I did an extra 15-20ish minutes while my green beans were steaming).
Although this was a delicious meal, I probably won't be making it toooo often because of all the heavy cream and butter. I am so glad Cory loved it, and I can't wait to make it again soon!
Also, let me know if you guys have any ideas on how to make this slightly healthier! :)
