Let's Talk About COCONUT OIL!

Okay so I know that coconut oil is becoming the new "thing", and I am officially a believer! We started out by giving it to the dogs in their food (along with a raw egg) and it makes their coat SO soft and shiny and perfect. Literally they get compliments all the time about how beautiful their coats are (sorry for being a braggy mom)! Then I saw some other recipes that used coconut oil in place of EVOO, so last night I decided to cooking my chicken in it and I could most definitely tell a difference! It adds such a sweet and delicious flavor, not to mention all the health benefits!

After a quick trip to Aldi this afternoon (and getting caught in some snow) I decided to whip up a light summer-y salad, to brighten up this dreary day! I used coconut oil and lemon juice as my dressing and OH MY GOSH it was amazing! Recipe for the salad is below!

Quick Summer Salad with Coconut Oil Dressing

Ingredients:

~handful of spring mix (spinach, arugula, kale)

~5 strawberries, sliced

~1 avocado, diced

~5 or 6 cucumber slices

~1 meyer lemon

~1 tbsp coconut oil

~S&P

Directions:

1. Combine all of your ingredients in your bowl (or plate) except for the coco oil and lemon juice (and S&P).

2. Add your coco oil and lemon juice in a microwave safe bowl and heat for 30 seconds.

3. Pour your lemon juice/coco oil mixture over your salad, and add a little salt and pepper to taste. Enjoy!

Its THAT easy, and so good! The dressing made the veggies and especially the strawberries taste extra good. Literally can not say enough good things about the lunch I just had, and it was all on a whim! Happy Hump Day, friends!
