Teriyaki Chicken and Vegetables

As you all already know, I get the majority of my recipes from Facebook, because there is always new ones popping up on my timeline! My friends are all part of different Facebook groups and see different delicious recipes, and thankfully share them for everyone to see! I find the ones that either look interesting or extremely easy and give them a try! I found this one from TipHero, and it was so easy and pretty good, too! I changed it just a little from the main recipe, but that teriyaki sauce was AMAZING! It had the perfect kick in it that was just ugh so good! Link to original recipe is here, and also listed below!
Teriyaki Chicken and Vegetables

Ingredients: ~1 tablespoon olive oil ~1-½ pounds boneless chicken thighs, diced (I used chicken breast) ~ 8 ounces broccoli florets ~2 cloves garlic, minced ~3 large carrots, sliced on the bias (I used baby carrots cut in half or thirds) ~Chili flakes, to taste (optional) Teriyaki Sauce ~2 tablespoons ginger, minced
~1/3 cup soy sauce ~1/3 cup water ~4 tbsp corn starch ~1/4 cup honey
Directions:
1. In a small saucepan over medium-low heat, combine all of the ingredients for the teriyaki sauce. Stir occasionally, for about 5 minutes, until the sauce has thickened. Set aside.
2. Heat a large sauté pan over medium-high heat. Add the olive oil, then add the chicken in a single layer. Let cook for about 3 minutes or until browned, then flip and cook the other side until browned.
3. Add the garlic, carrots and teriyaki sauce, and let simmer for 5 minutes.
4. While the chicken is cooking, steam the broccoli.
5. Add the steamed broccoli to the cooked chicken and sauce. Sprinkle with chili flakes, if using, and toss to mix.
6. Serve with rice or udon noodles.

I served this mixed with white rice, but it was a little watery because I didn't let the rice absorb all the water it was cooking in. I starting boiling my water for my rice and subsequently cooking my rice before I started cooking anything else. I prepared everything before actually cooking because I wasn't too sure how long it would all take, but it ended up being less than a half an hour! This dish has such good flavor, I can't wait to try this teriyaki sauce on other dishes! Stay tuned!
