Southwestern Chicken Alfredo Skillet

YOU GUYS! We finally got all of our Household Goods, and that means we finally all of our kitchen ware and I couldn't be more ecstatic!! Earlier this week I created our menu until the next payday, and I found this new recipe. It looked so delicious and I couldn't wait to try it. I found it while scrolling through Facebook the other day and quickly wrote down all the ingredients. It's a recipe from 12 Tomatoes and it is also listed below! You guys will definitely enjoy!
Southwestern Chicken Alfredo Skillet

Ingredients:
~2 boneless skinless chicken breasts, cubed
~1 1/2 cups heavy cream
~2 cups low sodium chicken broth
~1 1 lb package penne pasta
~1 15 oz can black beans, drained and rinsed
~1 15 oz can diced tomatoes (I used fresh tomatoes cause duh, they're fresh...)
~1 15 oz can corn, drained
~1/2 cup shredded parmesan cheese
~1 packet taco seasoning
~2 t bsp cooking oil (I used EVOO)
~1 tbsp minced garlic
~S&P, to taste
~Chopped cilantro or green onion, for garnish (I used green onion)
Directions:
1. In a large skillet, heat oil over medium heat and add chicken, salt, and pepper, and brown 4-5 minutes, stirring occasionally. (I messed up and added the garlic now, instead of in the later steps, but it made the kitchen smell so good so I think its okay)
2. Add cream, broth, taco seasoning, and stir to combine. Stir in pasta, and bring to a light boil.
3. Reduce heat and stir in corn, beans, garlic, and tomatoes. Cover and cook about 10-15 minutes or until pasta is completely cooked, stirring occasionally.

4. Turn off heat and stir in parmesan until melted. Garnish with cilantro or green onions, serve warm, and enjoy!
This was so good, Cory had two FULL servings (and he did the dishes ;) Keep in mind you are adding the pasta uncooked to your dish, so to make sure there is enough room in your skillet, you might want to either add a little less pasta or add more chicken broth, or even cook the whole meal in a pot (which is probably what I should've done). Nonetheless it was still awesome, and definitely something different!
