Brainfood Breakfast Sammie

Something kind of weird happened this morning. I was just messing around in the kitchen making breakfast. The past week, I have been eating a lot of tomatoes, eggs, and avocados. This morning while I was in the kitchen, I remembered a video that Tasty shared, and I decided to give it a go. I put my own little twist on it, and only used the Tasty recipe as a starting point! Recipe is below:

Brainfood Breakfast Sammie
Ingredients:
~1 egg
~1 piece of bread, toasted
~1 small tomato
~1 avocado
~handful of mozzarella cheese
~1 tbsp of butter
Directions:
1. While your bread is toasting (currently don't have a toaster so I'm using the oven, and it takes a little longer...), melt the butter in a pan so your egg doesn't stick to it. Crack your egg and cook it over easy (I prefer over medium, to each his own).
2. While your egg is cooking, slice up your tomato and avocado. Layer them on top of your toast while you're waiting for your egg to finish cooking (I did tomato then avocado).
3. When your egg is done (it only takes a few minutes, so you have to work fast in steps 1 and 2), slide it on top of the avocado. Sprinkle mozzarella cheese on top of the egg and put in the oven.
4. Broil for about 5 minutes, or until the cheese is all melted, take out of the oven, and enjoy!

This is such a great way to start your day. I usually serve with the rest of the avocado and tomato, or some strawberries if we have any. When I eat this breakfast, I am always full until late afternoon, such great a great breakfast!! I actually took a picture of this on Snapchat, and had 2 separate people ask me for the recipe, so Cory suggested to post it up on here!
