Salmon and Broccoli for 2

Keeping up with my healthish eating, I decided to make salmon and steamed broccoli for dinner last night! We all know how much I love that steamed broccoli! However, I did make mac n' cheese alongside it and of course it was amazing (duh, its mac n' cheese) albeit not healthy... While I figure out the best way to make homemade mac n' cheese, the boxed Kraft will have to do!

Okay, so, normally I make my salmon with lemons and onions, very quick and clean (I'll share that recipe at a different time)! This time I didn't have any lemons (and I found out that I make it too lemony, thanks Don...) so I just made it up based on what we had. (We haven't been able to do a huge grocery shop since we arrived here in NY). I grabbed some minced garlic, a little bit of butter, though Italian dressing would have done the job, and a white onion. The recipe is below:

Salmon

Ingredients:

~4 half salmon fillets (not 4 1/2)**

~3 cloved garlic, minced (actually just add however much you want, its garlic, you can't go wrong)

~1 medium white onion, sliced

~2 tbsp butter

~S&P to taste

Directions:

1. Melt your butter in a skillet. Add half of your sliced onions and all of the garlic. Lay your salmon fillets on top of the onion/garlic mixture. Layer the rest of the onion slices on top of the salmon.***

2. Flip your salmon carefully so you dont rip it (cooked salmon is so brittle, its so annoying...) and continue cooking the other side. This would be a good time to start steaming your broccoli.

3. Your salmon is ready to serve when it starts looking somewhat flaky and light pink! Your garlic and onions will get burnt but thats okay, it will still taste perfect!

**You could also do 2 whole fillets, I only used 4 half fillets because I couldn't get fresh salmon :(

***Normally you could cover your skillet and add a little water, I just didn't do it for this particular recipe!

Thats basically it, cooking salmon is the easiest thing. Plus, salmon is so good for you! I hope you guys enjoy :)

Store fresh herbs in a glass of water in your refrigerator.
