Chicken Alfredo and Sweet Potato Bites

I recently started trying to eat a little bit healthier, and by doing so, I cut out soda (SO hard for me to do that) and I'm trying to add more vegetables to my dishes. Last night, I decided to make Chicken Alfredo (Cory's absolute favorite) and I know what you're thinking..."Alfredo sauce has heavy cream in it, that's not healthy...." however, I added so many delicious veggies and cut the sauce with some water to lighten it up a bit! I loved it, and Cory had three servings, so safe to say he loved it too!! I also made some sweet potato bites sprinkled with cinnamon, sugar, and other spices! Of course, I am the worst sweet potato maker and I should've cooked them a little longer AGAIN but they would definitely be delicious when I figure out how to cook them properly! Recipes for both are below!!
Chicken Alfredo

Ingredients:
~1 chicken breast, diced
~1 small white onion, diced
~1 bell pepper, diced
~handful of kale, sauteed
~handful of steamed broccoli
~1 small tomato, diced
~any kind of pasta you want (I used penne), cooked
~1 jar of alfredo sauce (I used mushroom alfredo sauce)
Directions:
1. Put your uncooked chicken in a pan with some Italian dressing (or EVOO and seasonings) and cook thoroughly.
2. When your chicken is cooked all the way through, add your vegetables and alfredo sauce and stir to combine.
3. Add your cooked pasta and stir until everything is all mixed together. Serve and enjoy!

Sweet Potato Bites
Ingredients:
~sweet potatoes, cubed (I used the pre-cut bag of steamer sweet potatoes, just enough for me and Cory, not the whole bag)
~cinnamon
~sugar
~nutmeg
~ginger
~1 tbsp butter
Directions:
1. Once your sweet potatoes are all steamed and ready to be eaten (all steamed and almost mushy), put them in a pan with a teaspoon of butter.
2. When your sweet potatoes are slightly coated in the melted butter, add a dash or two of cinnamon, sugar, nutmeg, and ginger, and stir your potatoes to coat evenly. When your potatoes are evenly coated, they are ready to serve up!
As you can see, this whole meal was so easy to prepare! It was a little difficult because I don't have all of my amazing kitchen appliances, but still relatively easy! This is the kind of recipe that I just threw together off the top of my head based on what was in my fridge! I hope you guys like these recipes, and don't forget that you can adjust them to fit your family size and the amount of people you are cooking for...
