Chicken Lo Mein

I saw this recipe on Facebook, another Tasty recipe of course. I first thought it was going to so easy, but when I was actually making it, all I could think of was that it was going to be a disaster! I have never made this type of food before, I have never cooked with Lo Mein noodles (unless you count making Ramen noodles, but really, no....) I was actually trying to convince Cory and Don that we should just go out to dinner, just so I could put off making this meal for another day. In the end, however, it turned out to be pretty damn easy and SO freakin' good! The link to the original recipe is here, though I actually followed it pretty loosely.
Chicken Lo Mein
Ingredients:

~4 servings of egg noodles
~3 Tbsp. of hoisin sauce (when I saw this I legit was like "wtf is this? apparently its very easy to find, more details about it at the bottom)
~1/4 cup of chicken broth
~2 Tbsp. of soy sauce
~2 tsp of sesame oil
~1 tsp of cornstarch
~1 Tbsp. of vegetable oil
~1 Tbsp. of ginger
~2 garlic cloves, minced
~1/2 medium onion, sliced
~1/2 shiitake mushrooms, sliced
~1/2 cup of carrots, sliced
~1/2 cup of sugar snap peas, halved
~1 pound of chicken breast, diced
~Chopped scallions for garnish
Directions:
1. Mix all of your sauces (except for the veg. oil, and including the corn starch) and set aside.
2. Heat oil over medium high heat, and add your garlic and ginger, and stir until fragrant (??I just stirred until it got really garlic-y in the kitchen...). Add your chicken and cook until no longer pink. Meanwhile, get your pot of water boiling for your noodles.
3. Add all of your vegetables and "stir fry" until vegetables are tender.
4. Add your cooked egg noodles and your sauce, and stir until well mixed.
5. Serve with scallions and enjoy!

I was legit intimidated when I was actually cooking this recipe. Watching the video, I realized I didn't have that big pot/pan thing (I think its called a wok?) and I was sure that not having it would mess up the whole recipe. Then I thought I didn't have enough ingredients! So, back to this hoisin sauce...I couldn't find it in my initial grocery shopping trip to the commissary, not even down the oriental aisle (I hope that's not racist). I made a mental note to go to Times Grocery Store to get it but I actually forgot about it until I was in the middle of cooking. Don came to the resuce and went to get it for me, and he said that it was very easy to find at Times, down that same section. This style is food is so common here in Hawaii, the locals use this stuff to cook with on the daily, so I'm not sure how easy to find or how popular it is back on the mainland. But anyways, this meal turned out so so so good. I added more sauce than the recipe suggested, and probably more vegetable too (I never usually measure my vegetables, I just eyeball it). However, if you were making this meal for a big family or were wanting leftovers, I would definitely recommend doubling it. We only have a small portion of leftovers, I guess that means I'll have to make Chicken Lo Mein again sometime soon!
