Another Recipe from my Momma!

My mom has always told me that I need to learn how to make alfredo sauce from scratch, and of course she added the recipe in the cookbook she made me (can you tell I'm a little obsessed with it?)! So obviously, I made fettuccine with homemade alfredo sauce for dinner last night, and it turned out so good! The recipe is below, along with different ways you can make it! Enjoy!

Fettuccine Alfredo:

Ingredients:

~1 to 1 /2 cups heavy cream

~6 tbsp butter, divided by tbsp

~2 cups fresh parmesan cheese, grated or shaved (I used Kraft shredded Parm, sorry mom!)

~1 clove garlic, minced

~1 tbsp lemon zest (I dont have a zester thing, so I just used fresh lemon juice...)

~EVOO

~salt and pepper to taste

~1 box Fettuccine noodles

Directions:

1. Get a large pot of salted boiling water started for your pasta.

2. In a heavy saucepan on medium heat, melt a tbsp of EVOO, and add your garlic, but be careful not to scorch it. (I found this to be too hot for my garlic...)

3. After 2 minutes, add you lemon zest (or juice) and cook for a few seconds.

4. Add a tablespoon of butter at a time to the pan, waiting until it melts before adding the next tablespoon, until you've used all your butter.

5. Add your cream and slowly add your cheese, and contiune stirring to melt. Add s&p and continue to stir until it's thick and luscious! (really mom, luscious?)

6. Add your drained pasta to the dish, plate it up, and serve!

I added steamed broccoli and red peppers to the sauce, and also thawed out, pre-cooked mini shrimp and oh my gosh it was so good! I cooked the shrimp in a pan with some EVOO and more lemon juice, just to give it some extra flavor before putting it to my pasta mix!

**MOM TIP**:

Add peeled & de-veined shrimp, lump crab, mussels, or lobster for Seafood Alfredo!

Add fresh spinach and your favorite veggies for Fettuccine Primavera!

Cory and Don ate two helpings each, and we still have leftovers! This tasted so much better and so much more fresh than store bought alfredo sauce, and it was so easy!!
