Chicken and Yellow Rice, Fowler Edition

When I was growing up and my mom would make chicken and yellow rice, she always made a side of broccoli. So when Cory first asked me to make chicken and yellow rice for dinner one night a few months ago, my first instinct was to make broccoli as a side dish. I found out later that because I was making broccoli so much lately (because why not? It's delicious!), Cory started feeding it to our dog, Kuper (because "dog's need veggies too").......The next time I made chicken and yellow rice, I decided to switch it up! The recipe is below:

Chicken and Yellow Rice:

Ingredients:

~2 bags of Mahatma Yellow Rice (the bigger sized bag, NOT the 142 g)

~2 chicken breasts

~1 green bell pepper

~1 orange bell pepper

~1 small/medium onion

~1 can of corn

~1 can of diced tomatos w/ chilies

~handful of taco seasoning

Directions:

1. Cut the chicken into bite sized pieces, put in pan and season as desired (I always use pepper, garlic powder, red pepper flakes, oregano, some type of Mrs. Dash, and either water or Italian dressing). Cook thoroughly. Add the taco seasoning to the chicken. You may need to add a little bit more water to make sure the seasoning gets absorbed into the chicken.

2. While your chicken is cooking, start boiling the water for your rice. Boil as directed on package. Since you are using two packages, make sure you use 7 cups of water instead of 3.5 cups, and 4 tblsp butter instead of 2.

3. While both your chicken is cooking and your water is boiling, cut up your peppers and onions, and get all the other ingredients ready.

4. When the water is boiling, add the rice and stir to make sure it doesn't stick to the bottom of the pot. When the rice is mostly cooked, only a little bit of the water remains, you can add the chicken and all your vegetables. Stir until all the water is absorbed.

5. Once the water is absorbed, it is ready to serve!

I added about 1 1/2 cups of cheddar cheese to the pot because cheese makes everything better. You can also top with green onions or avocados, and as much lime juice as you want!

I love this recipe because you can add any type of vegetable to the mixture! I first made this with whatever I could find in the fridge/pantry, back before I started planning our meals! Cory and our roommate, Don, loved it instantly! Keep in mind that since it is made with 2 of the medium sized bags, it makes a huge serving, and you will have leftovers for days! (And you may want to adjust the amount of chicken or veggies you add, depending on your taste).
